These energy balls are based on the recipe used to create my Almond and Cocoa Energy Balls.
You might have noticed from my Instagram feed, that I am getting really into my energy balls. Every week I seem to be making a slightly different batch for the week ahead ! Sundays have become a day for prepping. And I love it.
As I am trying to exercise more often, I feel like I need a little extra. With more calories than usual being burned, my body is craving more. However, I am someone who is likely to snack on unhealthy food for a quick hunger fix. With these in the fridge, ready to eat, I don't need to reach for my secret chocolate stash I have in my drawer. (Yes, I do have one of those!)
Whilst these are also great for a post work-out, they are great for just snacking too. Give them a go, and let me know your favourite flavour combination. They're easy to make and really scrummy, so there is nothing stopping you :D
Coconut Oil 2 tbsp
Peanut butter with coconut (or any nut butter) 1 tbsp
Chia seeds 2 tbsp
Seeds (I used a mix) 1 tbsp
Desacated coconut (to coat)
Blend the almonds, chia seeds and seed mix in a blender until fairly fine. Then add the chopped dates and continue to blend. Once blended, add in the rest of the ingredients except for the coconut. You will notice the mix start to come together. When this happens, stop blending! Once stopped, it's time to start forming the mix into snacking balls. Take a small handful, or tablespoon of the mixture and roll into a ball with your hands. Do this until all of the mix has been used, and place them in the refrigerator in a sealed container.
They're now in the fridge, to allow you to snack clean!
