Butternut Squash Salad Recipe

Butternut squash salad: simple, warm and healthy.

Do you want to stay healthy during the winter months, but crave carbs and sugar? That's completely normal. Your body isn't designed for the cold! So it craves warmth and food which gives you energy fast, like carbs.

To beat the carbs and sugar trap, you need to make sure you meal prep to keep your hunger at bay.

For me, prepping healthy but delicious food is always the answer! And I absolutely love butternut squash freshly roasted from the oven.

Give this simple salad a go, and let me know what you think!

1/4 butternut squash

Handful chopped cherry tomatoes

1/2 teaspoon cumin

Dash cayenne pepper

Pinch of salt

Drizzle of olive oil

Chopped fresh chilli (optional)

Chop the butternut squash into chunks and place on a baking tray. Drizzle with olive oil, cumin, pepper, salt and chilli.

Roast on 180 degrees for 25 minutes.

Plate with chopped tomatoes, and add leaves if you need!
