1 x cup of grilled Red Peppers
1 x glove garlic
1 x large handful of chopped fresh basil
½ cup roasted cashews (unsalted)
Pinch salt & pepper
Large splash of oil
30g grated parmesan cheese or strong cheddar
Place red peppers, garlic, basil, cashews and salt & pepper into a food processor. Blend until almost smooth.
Add the oil and continue to blend on a low speed. Then add the parmesan cheese until combined and serve.
Remember to get your carrot sticks chopped and ready!
