Red Pepper, Cashew & Basil Dip

Need something to dip those carrot sticks into? I’ve got just the solution for you: red pepper, cashew and basil dip.

 

 

 

It’s sweet, delicious and healthy.

 

Not to mention, you can make it in about 10 minutes! YES, 10 whole minutes to snack time happiness.

 

Ingredients 

1 x cup of grilled Red Peppers

1 x glove garlic

1 x large handful of chopped fresh basil

½ cup roasted cashews (unsalted)

Pinch salt & pepper

Large splash of oil

30g grated parmesan cheese or strong cheddar

 

 

Method

Place red peppers, garlic, basil, cashews and salt & pepper into a food processor. Blend until almost smooth.

 

Add the oil and continue to blend on a low speed. Then add the parmesan cheese until combined and serve.

 

Remember to get your carrot sticks chopped and ready!
