Fueling your body with nutrients is essential to your performance throughout the day. And snacking on the right foods should not be compromised, which is why I always have energy balls ready-made in the fridge throughout the week.
I've chosen to add cocao powder instead of cocoa powder to my chocolately balls because it has more benefits. Cocao is a Superfood, has antioxidant effects, lowers blood pressure and helps to boost your cognitive performance, to name a few. So, although it costs more for cocao, I think the benefits are worth it. And it's bitter taste means you don't need to use a huge amount!
The great things about energy balls though, is you can easily swap out ingredients to suit your diet or tastes. For example, if you can't eat nuts, then you can use seeds instead which have a similar texture. Or if your need a protein boost, just add chocolate flavoured protein powder instead of the cocao.
Ingredients (Makes 8 balls)
60g Plain Oats
2 tbsp Cocao Powder
2 tbsp Chia Seeds
20g Ground Almonds
2 tbsp Peanut Butter (any nut butter is great)
1 tsp Coconut Oil
Chop the dates into small chunks using scissors and blend in your food processor for 1-2 minutes. Add the oats, blend again until fine. Add the rest of your ingredients, and blend until you have a nice, coming together consistency.
The nut butter and coconut oil should combine the ingredients together nicely, without making them too 'wet'.
Take small handfuls and shape into balls. Place the balls into Tupperware and leave in the fridge for 1 hour to toughen up. Then they will be ready to eat!
