Healthy Bounty Bars are my new favourite snack for a quick sugar hit. Lots of coconut smothered in a thin layer of dark chocolate and oozing a raspberry flavour to tickle those tastebuds!
Yummmmmmy to say the least. And not full of unnecessary sugars either.
I started off by making plain bounty bars, and discovered I had some raspberries in the fridge. So with a little experimenting, tried adding a few into the mix to add some extra flavour. Best decision yet because they added a lovely sweet raspberry taste and also made them a lovely pink colour inside.
If you aren't a fan of raspberries, why not try blueberries instead?
Ingredients (Makes 10-12)
90g Desiccated Coconut
2 tbsp Coconut Oil
3 - 4 Frozen Raspberries (optional)
A drop of food colouring to make them POP (optional)
100g Melted Dark Chocolate
Blend the ingredients together in a food processor and put straight into the freezer for 10 minutes. The mixture should now be firm enough to mold into small, bite-sized bars. If not ready, put back into the freezer for 5 minutes.
Melt the dark chocolate and cover the bars. The best way to do this is put the bars onto a cooling rack, and drip over the chocolate with a spoon. It's a little messy but you won't need to touch them, so no finger marks are left.
Place into the fridge or freezer to set.
